Why can't blackjack tables use like 5-8 decks to eliminate "card counting"?

Some say that using more than three decks is impossible because it's hard to shuffle and keep track. But I think that it can be done with some effort. The effort it takes to use more decks will offset the benefits of eliminating "card counting".
